l woke up this morning, looked out of the window and saw it was grey and rainy. The perfect day to make myself some cookies, Keto Cookies.
I’ve been keto for a year almost and I’ve lost 50lbs, feel amazing, no more heartburn. But it means that when I feel like some comfort food I have to make it myself. Or my wife has to, of course.
Keto Cookies

Here’s the recipe: –
1 cup almond flour
2 -4 tbspns chocolate chips
2 tbsp fine ground erythritol or equivalent
0.25 tsp salt
0.125 tsp baking powder
2 tbsp coconut oil
1 tsp vanilla extract
2 tsp almond milk
Mix well and divide into about 6 or 7 cookies about 2in diameter
Cook at 180C for about 15 minutes.
Leave to cool.
Make an Irish coffee and enjoy!
